Instant Pot Beef Brisket and Sweet Potato Chili
A Two-Time Award-Winner
Don’t let the headline fool you, while this is an Instant Pot recipe, it takes more than an instant to cook as it is made up of three different recipes. And yes, one of those recipes is for roasted sweet potatoes. However, it did win two different chili competitions so if you’re willing to put in the work and wanting to try something a little different, you will enjoy the fruits of your labor.

Ingredients
For Beef Brisket
- 2-2½ lbs beef brisket, cut into 4 pieces against the grain
- 1½ tsp Lawry’s seasoning salt
- 2 tsp black pepper
- 2 cups onions, sliced
For the Sauce
- ½ cup water
- 2 Tbsp tomato paste
- 2 Tbsp Worcestershire sauce
- 1-2 tsp liquid smoke
For Sweet Potatoes
- 2 lbs sweet potatoes, peeled and cut into cubes
- ½ tsp ground dried chipotle pepper
- ½ tsp Lawry’s seasoning salt
- ½ tsp smoked paprika
- 2 Tbsp olive oil, divided
For Chili
- ½ lb bacon, chopped
- 15 oz kidney beans, drained and rinsed
- 15 oz pinto beans, drained and rinsed
- 15 oz black beans, drained and rinsed
- 15 oz fire-roasted diced tomatoes, not drained
- 6 oz tomato paste
- 1 red onion, chopped
- 1 red pepper, chopped
- 1 jalapeño, chopped
- 2 cups beef stock
- 1 Tbsp dried oregano
- 2 tsp cumin
- 2 tsp salt
- 1 tsp black pepper
- 1 tsp smoked paprika
- 2 Tbsp chili powder
- 1 Tbsp Worcestershire sauce
- 6 garlic cloves, minced
- 1 Tbsp fish sauce (optional)
Instructions
PART 1
Make Your Brisket
- Salt and pepper your brisket and let sit while you get together your other ingredients.
- In a small bowl, mix together all the ingredients for the sauce.
- Place sliced onions in the inner liner of the Instant Pot. Place the beef on top of onions.
- Pour over the mixed sauce.
- Cook the meat at high pressure for 60 minutes for a brisket with some chew; 70-75 for a more tender brisket.
- Open the pot and remove the brisket with tongs.
- Using an immersion blender, blend together the onions and all the liquid in the pot.
- Turn Instant Pot to sauté and add xanthum gum or corn starch and allow the sauce to thicken.
Flavor Up!
- Shred the brisket with two forks in a bowl or an 8×8 baking pan with sides.
- Pour in some of the sauce to mostly cover the brisket, so it can soak up the juices.
- Note: you can do Part 1 the night before and let the brisket soak in the juices in the refrigerator. However, I’ve found that the brisket will soak up more of the sauce when it has not been placed in the refrigerator.
PART 2
Roast Sweet Potatoes
- Preheat oven to 400 degrees F. Line a baking sheet with parchment paper or a silicone baking mat.
- Combine sweet potatoes, chipotle pepper, ½ tsp salt, ½ tsp paprika, and 1 Tbsp olive oil in a large bowl and toss to coat. Spread sweet potatoes on the prepared baking sheet in a single layer.
- Roast sweet potatoes in a preheated oven until the outside is crunchy and the inside is tender, 20-25 minutes. Allow to cool to room temperature.
PART 3
Make the Chili
- Turn the Instant Pot to sauté and add the bacon. Cook until crisp. Once cooked, remove from pot and place on paper towel to absorb grease.
- Add the onions and black pepper to the Instant Pot and sauté until tender.
- Add in the shredded brisket, without any leftover sauce.
- Add the remaining chili ingredients to the pot, including the cooked bacon. Stir to combine.
- Turn the Instant Pot to the chili function and allow to cook for 20 minutes. Make sure the valve on top is in its sealed position.
- Once cook time is complete, allow a natural release for 15 minutes, followed by a quick release to release any leftover pressure.
- Remove lid and stir thoroughly.
- Stir in sweet potatoes gently, so as not to mush them.
- (Optional) Stir in fish sauce.
- Serve immediately with desired toppings!
