I Suffer From FOMO: The Instant Pot Diaries

I was minding my own business, already satisfied with my Prime Day purchases. An Alexa Echo was on its way. I had also just brought home a KitchenAid Stand Mixer in classic red earlier than planned (the plan was to get a new house first). So, the last thing I needed was another cooking device. But since I have an insufferable case of FOMO (fear of missing out) and an insatiable desire to purchase small kitchen appliances, when I saw friends talking about this thing called an “Instant Pot,” I couldn’t redirect my attention until I learned more.

That path led me to reviews and blog articles about how people L-O-V-E-D their Instant Pots. It led me to story after story about delicious dinners and cheesecakes made in a fraction of the time. It stuck this idea in my brain that I had to have one of my own. 

I tried to be strong. I thought I could just wait until Black Friday and only buy it then for some sale price if the interest was still there. But I kept trying to justify my purchase by telling myself:

  1. I won’t have to postpone crock pot dinners anymore because it was already too late in the day to start
  2. I could get rid of my crockpot AND my rice cooker, the latter which I had already been considering replacing
  3. I could even get rid of my yogurt maker, even though that would slightly pain me because it was still too new

But that Prime Day clock was ticking and kept getting louder and louder until I gave in. I really can’t speak ill of wannabe-ex chain smokers and alcoholics as my ability to stand strong in the shadow of a sale is faint, if not non-existent. 

So, here she is. My Instant Pot. 

She sat in the box for over a week while I finished a product launch at work, then procrastinated because I was afraid to use her, considering all the horror stories I had read. However, watching this video helped me pop my IP cherry by taking me through a water test with their machine. It was very thorough and clear; however, I’m not quite sure why we ended up testing 3 liters of water vs. 3 cups. Seems like the lesser amount would have taken less than 30 minutes. Bygones. I’ learned now. 

So, here we go…on an Instant Pot adventure along with thousands of others. Let’s see what we can make!
